I like quick and easy meals when backpacking. One of my favorites is Pizza Wraps.
Start with tortillas, add pizza sauce(I use Contadina in a squeeze tube) heated or not.
I then add parmesan cheese and pepperoni. I guess you could make it your own
by adding other ingredients. But like I said when I started. I like fast, easy and
light meals(I mean light in weight, not light in taste). I have eaten many different
types of meals while backpacking and this one is most likely my favorite.

Easy, tasty lunch
Hummus on Flatbread

Hummus (many different flavors available)
Flat bread

At home fill refillable squeeze containers with hummus - REI has these containers
Cut flat bread into quarters and pack in zip lock.

On trail, easy to squeeze out a high protein snack. Looks a little like bird poop but tasty.

Backcountry Beef Sandwiches

INGREDIENTS: Beef Jerky; Bread Rolls; [mustard, mayo, etc. packets]

INSTRUCTIONS: Simply use the jerky as your meat - tear open the roll, insert the jerky, add condiments. Enjoy!

The best thing about this recipe is that it provides a protein boost with mere seconds of preparation. The materials are light weight, and you can obtain the optional condiments (sandwich might be dry to some palates) from a restaurant.
Cereal Bars

Here's an easy variation of rice crispy treats that health nuts will appreciate.

At home: Melt 1/2 cup of butter in a frying pan (low heat). Add 3 cups of marshmallows. Stir frequently until melted. Remove from heat and then add 6-7 cups of your favorite cereal (I like Fiber One twigs). Stir until all cereal is coated. Transfer cereal into 9x6 pan (grease first) and lightly press with a flat tool. Once cool, cut into squares and pack for your trip.
You can play with the amount of marshmallows and cereal, depending on if you like your treats more flexible (use less cereal) or denser (use more cereal). S'mores, High Altitude Version

Everyone loves making s'mores when they're camping, but when you're climbing or back-country camping, it's not practical. Here's an alternative for those of you who have a sweet tooth.

At home:

Generously coat a graham cracker with cream cheese. Drop a handful of mini-chocolate chips into the cheese. Then lightly coat another graham cracker and close sandwich. Wrap in foil or place in a baggie. Eat within 4 hours.

Enjoy!
