Quinoa Salad for Base Camp

Base Camp Quinoa salad (serves 4)

1 to 1 ½ Cups of dried Quinoa

1 cup of figs

½ cup of walnuts

½ cup of fresh mint

½ cup of fresh Italian parsley

Juice of one orange

At home dice carrots and celery and peal orange. In a large zip lock mix celery, carrots, figs, walnuts, and orange. In the field per instructions on the Quinoa package bring enough water to a boil and add Quinoa. Let sit for 5 minutes. Add other ingredients and mix well.
