You can get some good ideas for your own workout from this backpack training plan post.  The Great Smoky Mountains backpacking trip that I trained for was of moderate intensity.  If you need to train for a more challenging trip then increase the time and volume of both stair training and hiking.  Any thoughts feel free to comment...
